While on this vegan challenge, there have been a few things that I miss having; pizza being one of them. Now I have never been a big fan of take out pizza and have always preferred making my own. Here is the latest pizza creation very simple, very fast.
Fast and easy Vegan Pizza (approximately 25 minutes + 20 minutes for pesto)
Pre-made vegan Dough (which can be found at any food markets)
Tomato based pesto (recipe below)
1/3 sliced orange or red pepper
5 sliced mushrooms
A handful of olives sliced
A dash of oregano
Put in the oven for 20 min at 350C
Tomato based pesto (approximately 15 minutes)
half a cup of sun-dried tomatoes
2 Tablespoons of fresh basil (dried basil will do just fine)
2 Tablespoons of fresh parsley (dried parsley will do just fine)
1 Tablespoon of chopped garlic
1/3 cup of pine nuts
1/4 cup of chopped onion
1/4 cup of balsamic vinegar
1 tablespoon of tomato paste
1/3 cup of crushed tomatoes
1/2 cup of olive oil
sprinkle of cayenne pepper flakes (optional)
salt to taste
How to:
a) place sun-dried tomatoes in warm water until tender (5-7 min)
b) in a blender or food processor (if available) combine basil, parsley, garlic, pine nuts, onion. Process until well blended. Then add balsamic vinegar, tomato paste and crushed tomatoes and blend. Stir in olive oil and cayenne pepper flakes (optional). Season with salt.
